What is wagyu steak?
Wagyu steak refers to a cut of beef that comes from a specific breed of Japanese cattle. The term wagyu itself is a Japanese word, with wa meaning Japanese and gyu meaning cow. The Wagyu cattle breeds are known for their high level of marbling, giving their beef a distinctively rich and tender flavour profile that's generally considered to be superior to other beef.
The Wagyu breed includes several strains, including the Japanese Black, Japanese Brown, Japanese Shorthorn, and Japanese Polled. However, the most prized and well-known is the Japanese Black, particularly the strain known as Kobe beef. This breed of cattle is often fed a diet rich in beer and sake and is known to receive massages to help relax their muscles, a practice that is believed to contribute to the high marbling content.
Wagyu steaks stand out from other steaks primarily due to this marbling, which refers to the intramuscular fat deposits evenly dispersed within the lean muscle. This fat is mostly unsaturated and has a low melting point, which leads to the characteristic melts-in-your-mouth texture of incredible wagyu steak. This marbling also leads to a richer flavour compared to other types of steak.
In addition to Japanese Wagyu, there are also other variations, such as Australian or American Wagyu, or domestic Wagyu which are typically a cross between Japanese Wagyu breeds and domestic beef cattle.
